Ingredients

  • 1 box Homemade Quick Gourmet Cowboy Cookie Mix

  • 1/2 cup unsalted butter, melted

  • 1 large egg, at room temperature

  • 1/4 cup brown sugar

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/2 cup chocolate chips

Directions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.

  2. In a large mixing bowl, combine the melted unsalted butter and the Homemade Quick Gourmet Cowboy Cookie Mix. Stir until well blended.

  3. Add the egg, brown sugar, vanilla extract, and salt to the bowl. Mix until a thick dough forms, about 2-3 minutes.

  4. Fold in the chocolate chips until evenly distributed throughout the dough.

  5. Scoop about 2 tablespoons of dough into each muffin cup, pressing it down slightly to create a cup shape. Fill each cup about halfway, leaving enough space for the cookies to rise without overflowing.

  6. Bake the cookie cups in the preheated oven for 12-15 minutes, or until the edges are golden brown and the centers are set but still soft.

  7. Remove from the oven and let the cookie cups cool in the pan for about 5 minutes before gently removing them with a spoon or knife. Allow them to cool completely on a wire rack.
