2 15oz cans corn, drained
8 oz cream cheese, softened
1 cup shredded pepper jack cheese
½ cup sour cream
6 slices bacon, cooked and chopped
¼-½ cup Lock, Stock & Barrel
1-2 teaspoons Open Range All-Purpose Seasoning
Fresh chopped parsley (optional, for garnish)
Cook the bacon in a cast iron skillet until crispy. Remove, chop, and set aside, leaving a small amount of bacon grease in the skillet if desired.
Over medium heat, add the cream cheese, shredded pepper jack, and sour cream to the skillet.
Stir continuously until the cheeses are completely melted and smooth.
Fold in the drained corn, chopped bacon, candied jalapeños, and Open Range All-Purpose Seasoning.
Continue cooking for 5–10 minutes, stirring occasionally, until the dip is hot, creamy, and bubbling around the edges.
Garnish with extra candied jalapeños and parsley if desired. Serve warm with tortilla chips, crackers, toasted baguette slices, or fresh vegetables.
